From 29 years of Michelin Star on the shores of the Lake Geneva coupled with catering at Château de Ripaille.
During that time, they take over the “chic” brasserie Le Scampi and decide to open their own restaurant Saint-Quentin, in Geneva. Having started as Chef upon opening, Charles soon became associate Executive Chef for the Saint-Quentin restaurant in London.
Amongst this, they are sought after for advice, consultancy and demonstrations in France, Canada, Russia, Denmark and United Kingdom (Dorchester Hotel, London).
